Street Corn Pasta Salad

Serves: 2-4
This delicious pasta salad is inspired by the flavors of Mexican street corn. It's made with grilled corn, cotija cheese, cilantro, lime juice, and a smoky chili dressing. It's the perfect summer side dish or light lunch.

  • 8 oz rotini pasta
  • 2 cups corn kernels
  • ½ cup Rizo Bros Cotija, crumbled, plus more to top
  • ¼ cup chopped cilantro
  • ¼ cup finely diced red onion


  • ½ cup sour cream
  • 2 tbsp mayonnaise
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • ½ tsp garlic powder


  1. Cook the pasta according to package instructions. Strain then rinse with cool water, until room temperature or cooler. Transfer to a large bowl.
  2. Mix together the ingredients for the dressing until smooth.
  3. To the pasta, add the corn, cotija, cilantro, and red onion. Pour the dressing mixture on top and toss to combine and coat all ingredients.
  4. Chill until ready to serve. Top with extra cotija and cilantro if desired!
