Southwest Caesar Salad

This Southwest Caesar Salad is a delicious and refreshing twist on the classic. It's made with romaine lettuce, grilled corn, black beans, pumpkin seeds, and a chipotle Caesar dressing. The cotija cheese adds a salty and tangy flavor that perfectly complements the other ingredients.

INGREDIENTS:

  • 4-6 cups chopped romaine lettuce
  • ½ cup cherry tomatoes, halved, or more or less to taste
  • ⅓ cup corn kernels, or more or less to taste
  • ⅓ cup black beans, or more or less to taste
  • ¼ cup pumpkin seeds, or more or less to taste
  • ¼ cup crispy tortilla strips, or more or less to taste

Chipotle Caesar Dressing

  • 1 cup mayonnaise
  • ½ cup grated Rizo Bros Cotija
  • 2 tbsp lemon juice
  • 1-2 chipotle pepper in adobo
  • 2 tsp dijon mustard
  • 1 tsp worcestershire sauce
  • 3 cloves garlic, minced
  • ½ tsp ground black pepper
  • Pinch salt
  • Water, to thin

PREPARATION:

  1. Make the dressing: Add all ingredients for the Caesar dressing except water to a blender or food processor, using more or less chipotles for smokey flavor and spice. Blend until mostly smooth, about 30 seconds. Blend with a splash or more of water to thin the dressing to desired consistency.
  2. Divide the shredded lettuce between two bowls. Top each with desired amount of halved cherry tomatoes, corn, black beans, pumpkin seeds, and tortilla strips.
  3. Drizzle with desired amount of dressing and enjoy!
