One Pan Beef Enchilada Skillet with Cotija

Serves: 4-6
These fantastic enchiladas are made easy with only one pan and all your favorite fixings - bell pepper, black beans, enchilada sauce, pickled jalapeño and, of course, cheese!

  • 1-2 tsp avocado oil
  • 1 medium white onion, diced
  • 1 bell pepper, any color, diced
  • 1 ½ tsp taco seasoning
  • 1 lb ground beef
  • 15 oz black beans, drained and rinsed if canned
  • 15 oz enchilada sauce
  • 4 medium taco-sized tortillas, sliced into strips

 

Toppings

PREPARATION:

  1. Heat a medium-large skillet over medium heat and add the avocado oil. When the avocado oil is hot, add the diced onion and bell pepper. Saute, stirring often, until the onions are halfway tender, about 3 minutes.
  2. Add the ground beef and season with taco seasoning. Cook, stirring and breaking up the meat, until it’s browned and cooked through, about 5 minutes.
  3. Stir in the black beans and enchilada sauce. Cook, stirring occasionally, for about 5 minutes to let the flavors meld with the ground beef.
  4. Stir in the tortilla strips and turn off the heat. Keep stirring for a couple more minutes to allow the tortilla strip to soften.
  5. Serve hot with Cotija Cheese and other desired toppings.
