Mini Elote-Inspired Crispy Corn Waffles

Prepare to be wowed by our Mini Elote-Inspired Crispy Corn Waffles, combining the best of street food and brunch delights, delivering a crispy texture and a burst of elote-inspired flavors in every bite-sized waffle.

INGREDIENTS:

  • 2 tbsp mayonnaise
  • ½ tsp chili powder
  • Pinch salt and pepper
  • 2 cups corn kernels, thawed if frozen
  • ¼ cup all purpose flour
  • ½ cup crumbled Rizo Bros Cotija, plus more to top
  • Desired toppings such as sour cream, lime juice, and cilantro

PREPARATION:

  1. Preheat a standard waffle iron, oiling the iron if needed.
  2. In a bowl, mix together the mayonnaise, chili powder, and a pinch of salt and pepper. Add the corn, flour, and cotija and mix to combine.
  3. Scoop about ⅓ cup of the corn mixture into the center of the hot waffle iron. Close and cook until golden brown and crispy, about 3-4 minutes. Remove the mini corn waffle and repeat with the remaining corn mixture.
  4. Serve warm or at room temperature with extra cotija, sour cream, and cilantro on top!
