Cheesy Chilaquiles

Looking for a hearty breakfast or brunch option? Try chilaquiles! These traditional Mexican dish features crispy tortilla chips simmered in a zesty salsa, topped with cheese, crema, and eggs.

INGREDIENTS:

  • Optional: black beans or chorizo
  • 2 cups chunky red salsa
  • 3-4 handfuls tortilla chips
  • 2 eggs
  • Rizo Bros Cotija, crumbled, to top
  • Other toppings such as cilantro, lime wedges, sliced radish

PREPARATION:

  1. Optional: Heat black beans or cook chorizo in a deep skillet.
  2. Add the salsa to a deep skillet over medium low heat. Bring to a simmer.
  3. Once simmering, add the desired amount of tortilla chips. Simmer over low heat for 2-3 minutes, until the chips have softened.
  4. In another skillet, cook the eggs to your liking.
  5. Place the tortilla mixture on a serving plate and top with the cooked eggs. Top with the cotija and other desired toppings and enjoy immediately!
