Breakfast Tostadas with Cotija

Serves: 2-4
These tostadas make a hearty breakfast with creamy beans and topped with a fried egg.

INGREDIENTS:

  • 1, 14 oz can black beans, undrained
  • ½ cup chunky salsa, divided
  • 4 large eggs
  • 4 corn tostadas
  • Rizo Bros Cotija Cheese, crumbled
  • Toppings: Pickled onions, cilantro, avocado, etc.

PREPARATION:

  1. Heat a small saucepan over medium heat. Add the black beans and a couple tablespoons of chunky salsa.
  2. Heat the beans, stirring and lightly mashing the beans often, until heated through and cooked to desired consistency, about 5-7 minutes. Keep cooking for a thicker consistency.
  3. Meanwhile, heat a medium skillet over medium heat and fry eggs as desired.

Spoon a couple spoonfuls of the beans onto each tostada. Top each tostada with a fried egg, then top with salsa, Cotija Cheese, and other desired toppings!
