Serves: 6 One bowl and one baking sheet is all you need to achieve this flavorful salad with seasonal veggies and creamy, charred cheese.
Rizo Bros Grilling Cheese (1 package)
½ head red cabbage
1 head of Butter Lettuce or Greens of Your Choice
4 cloves of Garlic (crushed)
½ Red Onion
1 Winter Squash (we used Acorn Squash)
1 Sweet Potato
2 tbsp Dijon Mustard
1 tsp Honey
¾ cup Olive Oil
1 ½ tbsp Apple Cider Vinegar
Salt and Pepper (to taste)
Dice red cabbage, winter squash and sweet potato. Spread vegetables out over a parchment paper lined baking sheet. Drizzle about 2 tsp of olive oil, 3 crushed cloves of garlic and season vegetables with salt and pepper.
Roast vegetables in a 400 degree oven for 15 minutes.
Grill cubed Rizo Bros Grilling Cheese for 2 minutes on two sides.
To make the dressing: pour olive oil and apple cider vinegar into a small bowl or mason jar. Add 1 clove crushed garlic, honey, dijon mustard and mix well.
Plate salad with greens, roasted vegetables, sliced red onion, diced mint, Rizo Bros Grilling Cheese and drizzle with homemade salad dressing over the top.
