Watermelon Fresco Salad with Queso Fresco

Serves: 4
Use our mild, delicate Queso Fresco to add a bit of creaminess to fresh fruit or salad.

INGREDIENTS:

  • 1 cup Rizo Bros Queso Fresco, crumbled
  • 6 cups arugula greens, washed & spun dry
  • 3 cups seedless watermelon, cubed & chilled
  • ½ cucumber, sliced into 1/8” rounds
  • 4 ounces balsamic vinaigrette dressing
  • salt & black pepper to taste, freshly ground

PREPARATION:

  1. Combine fresh arugula greens, chilled watermelon cubes, cucumber rounds into large mixing bowl.
  2. Crumble 1 cup of Rizo Bros Queso Fresco. Add cheese crumbles into bowl.
  3. Drizzle 4 ounces of your favorite balsamic vinaigrette dressing into bowl and gently toss ingredients together. Enjoy as a starter or as your main dish!
