Veggie Oaxaca Quesadilla

Try our mild, melting Oaxaca Queso in this go-to quick & easy quesadilla.

  • ¾ cup Rizo Bros Oaxaca Queso, pulled
  • 2 tortillas, flour or corn
  • ½ cup of fresh veggies*, diced
  • salsa or sour cream to top, optional

*We recommend red & yellow sweet bell peppers, onion, and tomato


  1. Heat non-stick skillet to medium. Add 1 tortilla to pan. Top tortilla with ¾ cup pulled Rizo Bros Oaxaca Queso until distribute evenly, covering tortilla.
  2. Sprinkle diced veggies on top of Rizo Bros Oaxaca Queso. Place second tortilla on top of queso & veggies, sandwiching the ingredients.
  3. Let cook for 1-2 minutes or until the tortilla begins to lightly browned.
  4. Flip entire quesadilla and cook opposite side for 1-2 minutes or until lightly browned.
  5. Reduce heat to low and cook until cheese is fully melted. Remove from heat, slice into 6 triangles, and enjoy!
