Veg Mushroom Street Tacos

Serves: 2-4
The street tacos are not only delicious, they're also vegetarian. Made with jalapeño and mushroom, they are sure to please!

  • 1 tbsp extra virgin olive oil
  • ½ lb mushrooms, sliced
  • 1 medium zucchini, diced
  • 1 jalapeño, seeded and diced
  • ¼ cup red onion, diced
  • ¼ tsp chili powder
  • ¼ tsp ground cumin
  • ½ tsp dried oregano
  • Salt to taste
  • Corn tortillas, warmed
  • Rizo Bros Cotija Cheese, crumbled
  • Other toppings as desired such as cilantro, jalapeno slices, and salsa


  1. Heat a medium skillet over medium high heat and add the oil.
  2. When the oil is hot, add the mushrooms, zucchini, jalapeño, and red onion and stir to combine. Stir in the chili powder, cumin, oregano, and salt.
  3. Saute, stirring occasionally, until the vegetables are tender and most of the liquid has evaporated, about 10 minutes.
  4. Spoon the vegetable mixture into the center of 3-5 corn tortillas. Top with Rizo Bros Cotija Cheese and other desired toppings such as cilantro, jalapeno, and salsa.
