Tater Tot Nachos

Basically nachos, only better. Make these Tater Tot Nachos with Oaxaca cheese for a quick appetizer or an unforgettable dinner!

  • 1 bag frozen tater tots
  • 1 pound ground beef
  • 1/2 cup taco seasoning
  • 2 cups shredded cheddar
  • 2 cups shredded Rizo Bros Oaxaca cheese
  • 1/2 cup white onion, fine diced
  • 1 jalapeño, fine diced
  • 1 cup tomato, small dice
  • 1/2 cup chopped cilantro
  • 1/2 cup crema
  • 2 cups refried beans
  • 3 tbsp oil



  1. Bake tater tots in 300 degree oven for 10-15 minutes
  2. Cook refried beans in small saucepan for 5-7 minutes or until hot
  3. Set medium saucepan to medium heat and bring oil to heat
  4. Cook onions and jalapeños in oil until slightly translucent
  5. Add ground beef to onions and jalapeños and cook until browned
  6. Add taco seasoning and cook until meat is cooked through and drain off excess fat
  7. Place tater tots on small cookie sheet and cover with Oaxaca and cheddar cheese
  8. Bake in oven for 5-7 mites or until cheese is melted
  9. Top with beans and then meat
  10. Garnish with remainder of ingredients: tomato, cilantro, and crema
