Tacos Al Pastor

Serves: 4-6
A little bit of salty, a little bit of spicy and a little bit of sweet. Our Tacos Al Pastor with Queso Fresco will hit the spot tonight!

INGREDIENTS:

  • 1 pound pork, cut into small cubes
  • 1 can pineapple chunks, thoroughly drained (save juice)
  • 1 jalapeƱo, finely diced
  • 1/2 red onion, finely diced
  • 2 tbsp Chile powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp ground cumin
  • 1 bunch cilantro, roughly chopped
  • 1/2 cup Rizo Bros Queso Fresco, crumbled
  • 2 tbsp oil
  • 1 package small corn tortillas, heated

PREPARATION:

  1. Heat large skillet to medium-high heat, add oil to pan
  2. Place pineapple in skillet, turning occasionally until lightly caramelized
  3. Remove pineapple from pan, add pork, jalapeno, and onion
  4. Stir occasionally until pork is cooked
  5. Add dry seasoning and pineapple to skillet
  6. Add half of the pineapple juice and stir until juice is reduced
  7. Top each tortilla with portion of taco mix
  8. Garnish tacos with cilantro and Queso Fresco
