Summer Grilling Cheese Salad

Serves: 2-4
This is the ideal summer light salad with balsamic dressing, mixed greens, fresh tomatoes and grilled cheese.

  • ¼ cup balsamic vinegar
  • ½ lemon, juiced
  • 1 tsp dijon mustard
  • 1 tsp spicy brown mustard
  • 1 tsp honey
  • 2 tbsp olive oil
  • ½ tbsp za’atar spice blend



  • 8 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ cup thinly sliced red onion
  • 8 oz Rizo Bros Grilling Cheese


  1. Make the dressing by whisking all of the dressing ingredients into a bowl until combined. Set aside.
  2. Make sure the grill grates are clean and lightly greased with a paper towel before preheating the grill. Preheat the grill to 400 degrees.
  3. Slice the Grilling Cheese ino ¼” slices and grill on each side for about 2 minutes until you get the grill marks and the cheese is softened.
  4. Make the salad by tossing the mixed greens, tomatoes, cucumber, and red onion. Toss with desired amount of dressing and top with slices of the grilling cheese. Drizzle the cheese with more dressing if desired.
  5. Serve alongside your favorite protein for a complete meal!
