Serves: 4 These cheesy Oaxaca Stuffed Poblano Peppers are a a party in a pepper!
INGREDIENTS:
1 cup Rizo Bros Oaxaca Cheese (grated)
1 cup Black Beans
1 cup Chorizo
½ cup Corn
1 8oz can diced tomatoes
2 tsp Garlic
1 tsp Oregano
4 Poblano Peppers
¼ cup Red Onion
1 tsp. Cumin
1 tsp. Oil
Salt and Pepper (to taste)
PREPARATION:
In a skillet, heat the chorizo until cooked through.
In a bowl, add black beans, heated chorizo, corn, diced tomatoes, garlic, oregano, red onion, cumin, salt and pepper. Mix well.
Slice poblano peppers in half and brush with oil. Fill poblano pepper halves with chorizo/black bean mixture.
Bake in the oven for 10 minutes at 375 degrees. Pull out the peppers and top with grated Rizo Bros Oaxaca Cheese. Put back in the oven on Roast, for 5-10 minutes at 400 degrees or until the cheese has melted.
