Street Corn Nachos

Serves: 4-6
With two types of cheese, fresh sweet corn and mayo, these street corn nachos are sure to please.

  • 1 cup Rizo Bros Oaxaca Cheese, sliced
  • 3 cups corn tortilla chips
  • 1/4 cup Rizo Bros Spicy Cotija Cheese
  • 2 cups sweet corn (frozen or fresh)
  • 1 red onion, fine diced
  • 1 jalapeno, fine diced
  • 1 roma tomato, diced
  • 1/2 cup mayonnaise
  • 1 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 lime, zested and juiced
  • Salt and pepper, to taste


  1. Preheat oven to 350*F
  2. Heat medium skillet to high heat
  3. Add oil to pan and follow with adding corn
  4. Stir corn until it develops a dark color
  5. Add onions, garlic, and jalapeƱo to pan
  6. Stir until vegetables are tender
  7. Place mayonnaise, lime and garlic powder in a bowl
  8. Mix with a whisk until properly combined
  9. Season with cumin, salt, and pepper
  10. Lay chips on baking sheet lined with foil
  11. Top with Rizo Bros sliced Oaxaca Cheese
  12. Place in oven and bake until cheese is melted
  13. Take chips out of oven and top with corn mix
  14. Drizzle nachos with mayonnaise
  15. Top with Rizo Bros Grated Spicy Cotija Cheese
