Serves: 6 It's all the makings of Mexican street corn, but piled on a hot dog!
INGREDIENTS:
½ cup Rizo Bros Cotija Cheese (grated)
16 oz frozen Corn (thawed)
1 tsp Chili Powder
2 Tbsp Mayonnaise
1 tsp Lime Juice
1 Tbsp Cilantro
6 Hot Dogs
6 Hot Dog Buns
2 tsp Hot Sauce
Salt and Pepper (to taste)
PREPARATION:
In a mixing bowl, combine corn, ¼ cup Rizo Bros Cotija Cheese, chili powder, lime juice, cilantro, hot sauce, salt and pepper.
Grill Hot Dogs and place in a toasted bun of your choice. Top hot dogs with the street corn mixture and garnish with additional cotija cheese and cilantro.
