Street Corn Guacamole

Serves: 2-4
All the flavors or street corn, all the dipability of guac... it's an ideal pairing!

INGREDIENTS:

  • 2 large ripe avocados
  • ¼ cup minced red onion
  • 1 tsp minced garlic
  • 1 lime, juiced, divided
  • ¼ cup chopped cilantro, divided
  • Salt and pepper to taste
  • 1 cup corn kernels
  • 2 tbsp Rizo Bros Cotija, crumbled, plus more to top
  • 2 tbsp sour cream
  • 1 tbsp mayonnaise
  • ½ tsp chili powder

PREPARATION:

  1. Mash together the avocado, onion, garlic, ½ of the lime juice, ½ of the cilantro, and a pinch of salt and pepper to taste.
  2. In another bowl, mix together the sour cream, mayonnaise, cotija, chili powder, remaining lime juice, cilantro, and a pinch of salt and pepper. Fold in the corn and mix well to combine.
  3. Spoon the guacamole into a serving bowl or dish and top with the corn mixture. Top with more cotija cheese and cilantro and enjoy!
