Spicy Black Bean Flautas

Indulge in the fiery flavors of spicy black bean flautas, bursting with savory goodness and a satisfying crunch. Elevate your culinary experience with the creamy delight of Rizo Bros Queso Fresco, perfectly complementing the spicy kick of these delectable Mexican delights.

  • 1 tbsp avocado oil, plus more to brush on tortillas
  • 1 cup finely chopped white onion
  • 2 cloves garlic, minced
  • 4 chipotle peppers in adobo, finely chopped
  • 1 tbsp taco seasoning
  • ⅛-¼ tsp cayenne pepper
  • ½ tsp salt, or to taste
  • 2, 15 oz can black beans, drained
  • 6 medium (6 inch) flour tortillas
  • ½ cup crumbled Rizo Bros Queso Fresco, plus more to top
  • Desired toppings such as sour cream, cilantro, and lime wedges

PREPARATION:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Heat the oil in a medium saucepan over medium heat. Once heated, add the onion and saute until mostly tender, about 5 minutes. Stir in the garlic, chipotle peppers, taco seasoning, and a pinch of salt and pepper. Saute 1-2 minutes, until fragrant.
  3. Stir in the beans and simmer for about 5 minutes. Mash slightly, leaving most of the beans intact. Taste and add more salt and pepper if desired. Remove from the heat and let cool slightly, then stir in the ½ cup crumbled queso fresco.
  4. Spoon some of the bean mixture  into the center of a medium flour tortilla. Roll tightly, tucking the tortilla and pressing seam-side down on a greased baking sheet or dish. Repeat with the remaining bean mixture and tortillas. Brush or spray the outside of the flautas with oil.
  5. Transfer the baking sheet to the oven and bake for 15-20 minutes or until crispy and golden brown on the outside.
