Southwest Salad with Queso Fresco

Serves: 2-4
This delicious, refreshing salad is topped with Queso Fresco and a bright honey chipotle vinaigrette dressing.

INGREDIENTS:

  • 1/2 cup olive oil
  • 4 tbsp apple cider vinegar
  • 3 tbsp honey
  • 2 chipotle peppers (canned in adobo sauce)
  • 2 garlic cloves
  • 1 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp black pepper
  • Juice from 1 lime

 

  • 4-5 cups mixed greens
  • 1 can black beans – drained & rinsed
  • 1 cup fire roasted corn
  • 1 red bell pepper, diced
  • 1/2 cup crumbled Rizo Bros Queso Fresco
  • 1/4 red onion, diced
  • 1 avocado – diced or sliced
  • Cilantro

PREPARATION:

1. To make the dressing, combine all dressing ingredients in a blender or food processor and pulse until you reach a smooth and creamy consistency.
2. To assemble the salad, place your mixed greens in a medium size bowl and top with black beans, corn, bell pepper, onion, cheese, avocado, and cilantro.
3. Pour desired amount of chipotle honey vinaigrette on top, mix well, and serve! Crumble more Queso Fresco on top if desired.
