Shrimp Fajita Skillet

Serves: 4-6
Our spicy Cotija cheese is perfect crumbled on this shrimp fajita skillet.

  • 3 bell peppers, tri-colored preferred
  • 1 pound Mexican shrimp
  • 1 jalapeño, finely diced
  • 2 tbsp crushed garlic
  • 1/4 cup Spicy Rizo Bros Cotija Cheese
  • 1 bunch cilantro
  • 1 red onion
  • 1 tbsp ground cumin
  • 1 lime, zested and juiced
  • 2 tbsp canola oil


  1. Thinly slice bell pepper & dice red onion
  2. Heat large skillet to medium/high heat then add oil to pan
  3. Place jalapeño and bell peppers in pan & stir until lightly tender
  4. Add garlic to skillet and stir into pepper and onion mix
  5. Add shrimp to pan and stir until shrimp is cooked through
  6. Season with cumin, salt, and pepper
  7. Add lime juice and zest to pan, follow with cilantro
  8. Stir until juice is evaporated
  9. Enjoy!
