Fajita Shrimp Tacos

Looking for a delicious twist on taco night? Try these Fajita Shrimp Tacos! Seasoned with fajita seasoning and served with sautéed peppers and onions, these tacos are topped with crumbled Rizo Bros Grated Cotija and your favorite toppings like cilantro and avocado.

  • 3 tbsp extra virgin olive oil, divided
  • ½ lime, juiced
  • 2 tbsp fajita seasoning
  • 1 lb raw shrimp, peeled and tails removed
  • 1 bell pepper, sliced
  • 1 poblano pepper, sliced
  • ½ red onion, sliced
  • Small corn or flour tortillas
  • Rizo Bros Grated Cotija, to top
  • Toppings such as chopped cilantro and avocado


  1. In a medium bowl, mix together 1 ½ tbsp oil, the lime juice, and fajita seasoning. Add the shrimp and toss to coat with the seasoning mixture. Let sit for 5-10 minutes.
  2. Meanwhile, heat a large skillet over medium heat. Once heated, add the remaining 1 ½ tbsp oil to the skillet. Add the sliced peppers and onion and saute, tossing or stirring often, until browned and just tender, about 7 minutes. Remove from heat and set aside.
  3. Reduce the heat to medium, then add the shrimp. Cook for 2-3 minutes per side, until pink and cooked through. Remove from the pan and mix with the cooked peppers and onions.
  4. Warm the tortillas as desired, then place the shrimp fajita mixture in the tortillas. Top with the crumbled cotija and other desired toppings such as cilantro and avocado!
