Savory Dutch Baby

  • ¼ cup melted butter, divided
  • 4 eggs, room temperature
  • ¾ cup whole milk, room temperature
  • ¾ cup all purpose flour
  • ½ tsp salt
  • ½ tsp dried granulated garlic
  • ½ tsp onion powder
  • Rizo Bros Queso Fresco, crumbled
  • Other desired toppings: Cilantro, salsa, avocado slices


  1. Preheat the oven to 450 degrees Fahrenheit. Add 2 tbsp butter to a 10 inch cast iron skillet and place in the oven for 5 minutes to preheat and melt the butter.
  2. To a blender, add the remaining 2 tbsp melted butter, then the eggs, milk, flour, salt, garlic, and onion powder. Blend until very smooth, about 20-30 seconds.
  3. Remove the skillet from the oven and immediately pour the batter into the hot skillet. Bake for 20-25 minutes or until fully puffed up and golden brown. Do not open the oven for at least the first 15 minutes or else it will deflate.
  4. Serve warm with the crumbled queso fresco and desired toppings such as cilantro, salsa, and sliced avocado.
