Salsa Verde Chicken Flautas

Serves: 2-4
This meal is so easy to make and it's the perfect blend of heat and flavor! With a bit of spice, a bit of crunch and a bit of cheesiness these will be more than a bit of a crowd pleaser at your next party.

INGREDIENTS:

  • 1 lb chicken breast
  • 2 cups premade salsa verde
  • 14-16 small corn tortillas
  • Avocado or other neutral oil, to fry
  • Mexican crema, to serve
  • Rizo Bros Cotija Cheese, crumbled, to serve

PREPARATION:

  1. Add the chicken to a medium saucepan and pour the salsa verde on top. Cover with a lid and bring to a simmer.
  2. Simmer, flipping the chicken breast once or twice, until the chicken is cooked through, about 20-25 minutes. Remove from the heat and shred with two forks.
  3. Warm the tortillas in a damp paper towel in the microwave until pliable. Lay a tortilla flat on a work surface and place some of the salsa verde chicken into the center. Roll the tortilla over the chicken tightly. Repeat with the remaining tortillas and chicken.
  4. Heat a deep skillet over medium high heat and add enough oil to coat the skillet with about ¼-½ inch of oil. Once the oil is heated to about 350 degrees Fahrenheit, carefully place a couple flautas, seam-side down, in the hot oil.
  5. Fry for about 3-4 minutes, rotating with tongs every 2-3 minutes or so, until golden brown and crispy. Remove and let drain on paper towels. Repeat with the remaining flautas.
  6. Serve the flautas with a drizzle of mexican crema and Rizo Bros Cotija Cheese crumbled on top!
