Roasted Mexican Cotija Cauliflower with Pepitas

Serves: 4
Grilled to caramel-ly perfection and topped with salty Cotija cheese, this roasted mexican cotija cauliflower with pepitas is the ultimate autumn side dish!

  • 1/4 cup Rizo Bros Cotija Cheese 
  • 1 Head of Cauliflower 
  • ¼ cup Cilantro 
  • 1 tbsp Olive Oil 
  • 2 tsp Cumin 
  • 1 tbsp Pepitas Seeds 
  • ¼ cup Red Onion (diced) 
  • 1 tsp Garlic Powder 
  • 1 tsp Onion Powder 
  • Lime Wedges (garnish)
  • Salt and Pepper (to taste)


  1. Dice cauliflower into medium sized pieces. In a mixing bowl, toss cauliflower with olive oil, cumin, garlic powder, onion powder, salt and pepper. 
  2. Place seasoned cauliflower on a baking sheet and roast in a 400 degree oven for 10-15 minutes. 
  3. Once cauliflower is roasted, toss in Rizo Bros Cotija Cheese, pepita seeds, red onion and cilantro. 
  4. Garnish with lime wedges and squeeze of lime juice.
