Serves: 4 Grilled to caramel-ly perfection and topped with salty Cotija cheese, this roasted mexican cotija cauliflower with pepitas is the ultimate autumn side dish!
INGREDIENTS:
1/4 cup Rizo Bros Cotija Cheese
1 Head of Cauliflower
¼ cup Cilantro
1 tbsp Olive Oil
2 tsp Cumin
1 tbsp Pepitas Seeds
¼ cup Red Onion (diced)
1 tsp Garlic Powder
1 tsp Onion Powder
Lime Wedges (garnish)
Salt and Pepper (to taste)
PREPARATION:
Dice cauliflower into medium sized pieces. In a mixing bowl, toss cauliflower with olive oil, cumin, garlic powder, onion powder, salt and pepper.
Place seasoned cauliflower on a baking sheet and roast in a 400 degree oven for 10-15 minutes.
Once cauliflower is roasted, toss in Rizo Bros Cotija Cheese, pepita seeds, red onion and cilantro.
Garnish with lime wedges and squeeze of lime juice.
