Trim the asparagus, then place on a lined baking sheet. Drizzle with avocado oil and use your hands or tongs to toss the asparagus, evenly distributing the oil. Sprinkle it with salt and pepper and toss again.
Transfer the asparagus to the preheated oven and roast for roughly 10-12 minutes, until golden brown and just al dente. Remove from the oven.
Transfer asparagus to serving plates and drizzle with lemon juice. Sprinkle with lemon zest and crumbled queso fresco.
