Serves: 4-6 Made with real cheese, this Queso Dip is a copycat of the dip served at your favorite Mexican restaurant. Trust us, you'll want to make two servings.
INGREDIENTS:
1 tsp neutral oil, such as avocado
2 jalapenos, finely diced
1 tsp minced garlic
1 ¾ cups half and half
8 oz Rizo Bros Oaxaca, cut into cubes
8 oz monterey jack cheese, cut into cubes
4 oz cream cheese
Pico de gallo
Blue corn tortilla chips, to serve
PREPARATION:
Heat a small saucepan over medium heat and add 1 tsp avocado oil.
Add the diced jalapeno and minced garlic. Saute for about 2 minutes until the jalapeno has softened.
Add the half and half to the pan and bring to a simmer. Once simmering, add the Oaxaca, monterey jack, and cream cheese.
Continue to whisk the cheese until completely melted and smooth. Remove from the heat and allow to cool and thicken for about 10-15 minutes.
Pour the queso into the serving bowl and top with pico de gallo. Serve with blue corn tortilla chips.
