Pumpkin Spice Horchata

Serves: 4-6
Horchata is a rice-based Mexican drink that is made even better with fall-inspired warm pumpkin spices. This pumpkin horchata is great when mixed with espresso as a latte, too!

INGREDIENTS:

  • 3 cups water
  • ½ cup long grain rice
  • 1 tsp pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup milk (dairy, almond, or coconut)
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

PREPARATION:

  1. Add the water, rice, and pumpkin spice to a high speed blender. Blend on high until the rice is roughly chopped but still in pieces, about 30 seconds.
  2. Chill the rice mixture in the fridge for 3-4 hours. Strain the mixture through a fine mesh sieve, discarding the rice pieces.
  3. Whisk in the pumpkin puree, milk, maple syrup, and vanilla extract. Serve chilled or heated and enjoy. This pumpkin horchata is great when mixed with espresso as a latte, too!
