Serves: 8 This EASY pozole soup offers bold spices, tender pork and Cotija cheese!
INGREDIENTS:
1 cup Rizo Bros Cotija Cheese (grated)
3 cups Chicken Broth
2 lbs Pork Butt (boneless, cubed)
2 tsp Cumin
1 tsp Oregano
1 tbsp Chili Powder
5 cloves Garlic (crushed)
1, 14.5oz can Fire Roasted Tomatoes (with juice)
1, 15oz can Hominy
1 Lime (juiced)
Salt and Pepper (to taste)
Garnishes:
1 Avocado
1 cup Cilantro
1 Lime (wedges)
1 cup Radish (diced)
1 Jalapeño
Tortilla Chips
PREPARATION:
In a slow cooker (crock pot), place cubed pork butt, chicken broth, cumin, oregano, chili powder, garlic, tomatoes and salt and pepper. Cook on low for 6 hours.
After 5 hours of cooking, add hominy and lime juice to the slow cooker. Continue cooking for 1 more hour.
Once Pozole is ready, ladle into bowls and garnish with toppings. Top with Rizo Bros Cotija Cheese.
