Polenta Bowl with Charred Corn and Carnitas

Serves: 6-8
Add some flavor to your weeknight dinner with this delicious polenta bowl with charred corn, carnitas and cojita cheese!

  • 1 package instant polenta
  • 1 pound Carnitas
  • 1 can organic sweet corn kernels
  • 1 bunch cilantro
  • 1 small red onion
  • 1/2 cup Rizo Bros Cotija Cheese
  • 2 tbsp canola oil


  1. Heat large skillet to high heat
  2. Once skillet is very hot add corn to pan dry and sauté until corn starts to get dark
  3. Add canola oil and sauce until corn is slightly black
  4. Cook polenta according to instructions on packaging
  5. Finely dice red onion and roughly chop cilantro
  6. Heat Carnitas with preferred method
  7. Fold charred corn into polenta and set aside a small amount for the garnish
  8. Top polenta with Carnitas and Rizo Bros Cotija Cheese
  9. Garnish with diced red onion, cilantro and remaining corn. Enjoy!
