Pan Seared Panela Fajita Tacos with Tomatillo Salsa

Fajita tacos get an upgrade with grilled Panela cheese and fresh tomatillo salsa.

  • 1-3 tsp avocado oil, divided
  • 1 yellow onion, diced
  • 1 bell pepper, any color, diced
  • 1 tsp taco seasoning
  • 8 oz Rizo Bros Panela Cheese, sliced
  • Small corn tortillas, warmed
  • Tomatillo Salsa Verde, to serve


  1. Preheat a medium skillet over medium heat. Add the avocado oil.
  2. When the oil is hot, add the onion and peppers. Add the taco seasoning and stir.
  3. Saute, stirring often, until tender, about 10 minutes. Remove and set aside.
  4. In the same hot skillet, add 1-2 tsp avocado oil.
  5. Carefully place the slices of panela cheese in the hot oil. Fry for about 3-4 minutes, until crispy and golden brown. Flip and fry another 2-3 minutes, until crispy and golden brown. Remove and set aside.
  6. Assemble tacos: Place fried panela cheese in warmed corn tortilla. Top with sauteed peppers and onions, then tomatillo Salsa Verde. Enjoy immediately.
