Oaxaca Queso Fundido

Serves: 4-6
The perfect dish to bring to a party or just to whip up for some amigos on the weekend - Queso Fundido!

INGREDIENTS:

  • 1 red onion, fine diced
  • 2 tbsp crushed garlic
  • 1 jalapeño, fine diced
  • 1 red bell pepper, fine diced
  • 2 tbsp oil
  • 4 cups cream
  • 1 cup Oaxaca cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 1/4 cup grated Cotija cheese

PREPARATION:

 

  1. Place medium saucepan on medium heat
  2. Place oil in sauce pan
  3. Add onions, jalapeño, bell pepper, and garlic in pot
  4. Continue stirring until vegetables are tender
  5. Add cream to pot and stir
  6. Continue storing until cream is reduced half way
  7. Add dry seasoning to cream and stir
  8. Stir in Oaxaca, cheddar, and jack cheeses
  9. Stir until cheeses are melted and smooth
  10. Top finished queso with Cotija, serve with tortillas
