Oaxaca Quesadilla Burger with Chipotle Mayo

Juicy burger wrapped in cheesy tortilla with chipotle mayo.

Ingredients for Quesadilla Burger

  • 4 large ground beef patties
  • 4-5 large flour tortillas
  • ½ cup pico de gallo
  • ½ cup lettuce, shredded
  • 1 cup Rizo Bros Oaxaca Cheese, shredded

 

Ingredients for Chipotle Mayo

  • ½ cup mayonnaise 
  • 1-2 chipotles in adobo, finely chopped
  • 1 tsp garlic, minced
  • 1 lime, juiced

PREPARATION:

  1. In a small bowl, whisk together the ingredients for the chipotle mayo until smooth. Add a splash of water for a thinner consistency, if desired.
  2. Heat a large skillet over medium-high heat. Add the beef patties and cook 3-4 minutes per side or until desired doneness is achieved. Set aside and allow to cool to the touch. 
  3. Heat tortillas in another skillet or in the microwave until just pliable. Working on a flat surface, lay out one tortilla and spoon 2-3 tablespoons of pico de gallo into the center of the tortilla.
  4. Sprinkle 2-3 tablespoons of shredded lettuce on top of the pico de gallo.
  5. Place a cooked burger patty on top of the shredded lettuce.
  6. Sprinkle ¼ cup shredded Oaxaca Cheese on top of the burger patty.
  7. Fold the tortilla over the burger patty: Fold the top of the tortilla down over the filling and, working clockwise, continue folding the rest of the tortilla toward the center. If the tortilla is too small, cut another tortilla into quarters and place one quarter on top of the filling before folding the tortilla.
  8. Repeat with the remaining 3 tortillas and burger patties.
  9. Heat a large skillet over medium heat. Working in batches, place the filled tortilla in the skillet, fold side down. Cook 2-3 minutes or until the folded side is golden brown and crisp. Flip the quesadilla burger and repeat with the other side.
  10. Serve quesadilla burgers immediately with chipotle mayo as a dipping sauce or drizzled over top.
