No-Mayo Avocado Egg Salad

Indulge in a healthier twist on the classic egg salad with our No-Mayo Avocado Egg Salad recipe! Creamy avocados perfectly complement the rich flavors of Rizo Bros Queso Fresco, creating a satisfying and protein-packed dish that's both delicious and guilt-free.

  • ½ ripe avocado
  • 1 stalk celery, finely diced
  • 2 green onions, chopped
  • 1 chipotle pepper in adobo, chopped
  • 1 tsp dijon mustard
  • 1 clove garlic, grated
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 3 hard boiled eggs, roughly chopped
  • ¼ cup crumbled Rizo Bros Queso Fresco
  • 4 slices sandwich bread, to serve


  1. Mash the avocado, leaving some chunks as desired for texture. Mix in the celery, onion, chipotle pepper, dijon, garlic, salt, and pepper. Gently fold in the eggs and queso fresco.
  2. Toast the sandwich bread if desired. Spoon the egg salad over a slice of bread and top with another slice. Repeat with the other toasted bread. Use a serrated knife to slice the sandwich in half and enjoy!
