Serves: 3-4 Potatoes are already a great side, these are more than great. Elevate your potatoes with grated cotijo, tangy tajin, and cilantro.
INGREDIENTS:
1 ½ lbs mini baby gold potatoes
1 tbsp avocado oil
Salt and pepper to taste
Sour cream
Rizo Bros Grated Cotija
Chopped cilantro
Tajin
PREPARATION:
Preheat the oven to 400 degrees Fahrenheit.
Scrub the potatoes and place on a baking sheet. Drizzle with the oil and season with a generous pinch of salt and pepper. Toss to coat evenly in the oil and seasoning.
Transfer to the oven and bake for 25-30 minutes or until fork tender, stopping to shake the pan halfway through baking so they brown evenly. Remove and let cool for 5 minutes.
Cut into each potato partially, opening up or cutting some out so it can be filled with toppings. Top with a small dollop of sour cream, chopped cilantro, cotija cheese, and tajin seasoning.
