Mini Baked Potatoes with Cotija

Serves: 3-4
Potatoes are already a great side, these are more than great. Elevate your potatoes with grated cotijo, tangy tajin, and cilantro.

  • 1 ½ lbs mini baby gold potatoes
  • 1 tbsp avocado oil
  • Salt and pepper to taste
  • Sour cream
  • Rizo Bros Grated Cotija
  • Chopped cilantro
  • Tajin


  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Scrub the potatoes and place on a baking sheet. Drizzle with the oil and season with a generous pinch of salt and pepper. Toss to coat evenly in the oil and seasoning.
  3. Transfer to the oven and bake for 25-30 minutes or until fork tender, stopping to shake the pan halfway through baking so they brown evenly. Remove and let cool for 5 minutes.
  4. Cut into each potato partially, opening up or cutting some out so it can be filled with toppings. Top with a small dollop of sour cream, chopped cilantro, cotija cheese, and tajin seasoning.
  5. Serve hot as a little appetizer and enjoy!
