Mexican Tuna Melt with Oaxaca Cheese

Get ready for a tasty twist on a classic sandwich! Our Mexican Tuna Melt with Oaxaca Cheese features a zesty mix of tuna and Mexican-inspired spices, topped with gooey melted Oaxaca cheese and served on toasted bread.

  • ½ cup mayonnaise
  • 1 chipotle pepper in adobo, minced
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt and pepper
  • ½ tsp cumin
  • ¼ tsp coriander
  • 1, 7 oz can tuna, drained
  • ½ bell pepper, finely diced
  • ¼ cup finely diced red onion
  • 6 slices sandwich bread
  • 3 tbsp salted butter
  • 1 cup shredded Rizo Bros Queso Oaxaca
  • ⅓ cup shredded colby jack cheese


  1. In a small bowl, mix together the mayonnaise, chipotle pepper, and spices. Reserve and set aside about 3-4 tbsp.
  2. To the mayonnaise mixture, add the tuna, bell pepper, and onion. Mix to combine and coat the tuna with the chipotle mayonnaise.
  3. Butter one side of each slice of bread, using about ½ tbsp per slice. Spread the reserved chipotle mayo on the other side of each slice, using about ½ tbsp per slice. Place the shredded cheeses on top of the chipotle mayo. Follow with the tuna mixture. Top with another slice of bread, butter side up. Repeat with the remaining ingredients to assemble 3 sandwiches.
  4. Heat a large skillet over medium low heat. Place the sandwiches in the hot skillet and cover. Cook for about 3-4 minutes or until golden brown on the underside and the cheese is halfway melted. Flip and cook for another 3-4 minutes or until golden brown and cheese is melted.
  5. Serve hot with your favorite dipping sauce or spreads like salsa or guacamole!
