Mexican Style Avocado Breakfast Toast

Serves: 2-4
This Mexican-inspired take on avocado toast is the perfect balance of acidity from fresh lime juice, kick from hot sauce and the creamy deliciousness of crema and Queso Blanco.

  • 1 tbsp butter
  • 6 eggs, whisked
  • Pinch of salt
  • 4 slices sourdough bread, toasted
  • 2 ripe avocados
  • Salsa or hot sauce
  • Crema
  • Crumbled queso blanco
  • Cilantro
  • Lime



  1. Heat a large skillet over medium heat and add the butter. Once the butter has melted, add the eggs and a pinch of salt. Use a spatula to push the eggs toward the center until scrambled to your liking.
  2. Slice the avocados in half and remove the pit and peel. Thinly slice each half of the avocados.
  3. To assemble the toasts, spread ½ of an avocado on the toast, followed by ¼ of the eggs, salsa or hot sauce, crema, queso blanco, cilantro, and lime.
