Mexican Street Corn Casserole with Cotija Cheese

  • ¼ cup mayonnaise
  • ⅓ cup sour cream
  • 1 tsp chili powder
  • 1 lime, juice and zest
  • 24 oz corn kernels
  • ½ cup Rizo Bros Cotija Cheese, crumbled
  • 1 jalapeno, seeded and minced
  • ⅓ cup cornmeal
  • 1 egg
  • 1 tsp baking powder
  • Cilantro, to garnish


  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a medium bowl, whisk together the mayonnaise, sour cream, chili powder, and lime just and zest. Stir in the corn kernels and cotija cheese. Stir in the cornmeal, egg, and baking powder until well combined.
  3. Spread the corn mixture evenly into a medium baking dish.
  4. Bake in the preheated oven for about 30-35 mins or until slightly bubbly and firm in the center.
  5. Let cool before serving with cilantro as a side dish or appetizer!
