Mexican Roasted Zucchini

Serves: 2-4
This roasted zucchini is delicious and easily prepared in less than 20 minutes. Tossed with garlic, chili, and Queso Fresco cheese.

INGREDIENTS:

  • 2 large zucchinis, diced
  • 1 tbsp extra virgin olive oil
  • ¼ tsp dried oregano
  • ¼ tsp garlic powder
  • ¼ tsp chili powder
  • Pinch salt
  • Rizo Bros Queso Fresco Cheese, crumbled
  • Chopped cilantro, to serve

PREPARATION:

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. In a medium bowl, add the diced zucchini, olive oil, oregano, garlic powder, chili powder, and salt. Toss to combine, coating the zucchini with the oil and seasonings.
  3. Spread the zucchini in a single even layer on a large baking sheet.
  4. Roast in the preheated oven for about 15 minutes, flipping halfway, until slightly tender but still firm. Broil on high for 2-3 minutes, if desired for extra golden and crisp zucchini.

Place cooked zucchini on a serving platter and sprinkle with desired amount of crumbled Queso Fresco Cheese. Serve warm with chopped cilantro if desired!
