Mexican Kale Caesar Salad with Shrimp

Serves: 2-4
This flavorful twist on the classic Caesar salad is topped with shrimp and Grated Spicy Cotija Cheese!

  • 1 package mixed baby kale
  • 2 cups tortilla chips, broken apart
  • 1 bottle avocado or cilantro dressing
  • 2 cups peeled shrimp
  • 2 tbsp butter
  • 1 lime
  • 1 cup Rizo Bros Spicy Cotija Cheese
  • 1 cup roma tomato, small diced
  • Salt and pepper
  • 1/4 cup chopped cilantro


  1. Bring small sauté pan to medium-high heat
  2. Add butter and melt
  3. Add shrimp and stir until full cooked
  4. Squeeze lime juice into shrimp and stir
  5. Add cilantro to pan and stir
  6. Place tomato, kale, tortilla chips, and dressing in a large mixing bowl
  7. Fold ingredients to dress salad
  8. Top finished salad with shrimp and garnish with Spicy Cotija Cheese and additional chips
