Mexican Grilled Cheese

This crispy sandwich with grilled Panela Cheese, fresh avocado, tomato, and beans is the perfect lunch.

  • 4 pieces Rizo Bros Panela Cheese
  • 8 pieces Sourdough or French Bread
  • 2 Avocados
  • 1/2 Bunch Cilantro
  • 1 Tomato
  • 3 Green Onions
  • 1 Can Refried beans
  • 2 Tbsp Butter


  1. Butter one side of each piece of bread. On four pieces of the bread, spread refried beans. On the other four pieces, place slices of Rizo Bros Panela Cheese.
  2. Place butter side of bread down in a pan or on a flat top and heat until bread is crisp and the cheese is melted.
  3. In a bowl, smash avocado and add green onions.
  4. Place smashed avocado on the inside of the toasted bread, along with tomato.
  5. Place bean and cheese sides of the bread together and then cut in half.
