Mexican Enchilada Casserole

Serves: 4-6
Perfect for your next party or potluck, this enchilada casserole packs a lot of flavor.

INGREDIENTS:

  • 10 corn tortillas
  • 3 cups enchilada sauce
  • 3 cups Rizo Bros Oaxaca Cheese
  • 1 cup onion (chopped)
  • 1 red bell pepper (chopped)
  • 15 oz can of black beans
  • 1 cup corn (fresh or frozen)
  • 1 tbsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika
  • Salt and pepper
  • Cilantro
  • 1 jalapeño (optional)
  • Sour cream (optional)

PREPARATION:

  1. Sautee black beans, corn, onion and spices until heated
  2. Dip tortillas in enchilada sauce and layer casserole dish with black bean mixture, cheese and tortillas
  3. Top with extra enchilada sauce and Oaxaca cheese
  4. Bake at 350 for 25 minutes
  5. Garnish with cilantro, jalapeño and sour cream
