Mango Shrimp Ceviche

Serves: 2-4
Spiked with citrus and sweetness from the mango, aromatic onion, and cilantro, this ceviche is sure to pop. The Rizo Queso Fresco adds a nutty creaminess that balances out the spices in the dish.

  • 1 tbsp avocado oil
  • 1 lb raw shrimp, cut into bite sized pieces
  • 1 large mango, diced
  • ½ small red onion, finely diced
  • 1 jalapeño, minced
  • 1 tomato, diced
  • ¼ cup chopped cilantro
  • ½ cup lime juice
  • ½ orange, juiced
  • 3 small cloves garlic, minced
  • ½ tsp salt, or to taste
  • Pinch black pepper, to taste
  • Rizo Bros Queso Fresco, to top


  1. Heat a large skillet over medium heat and add the oil.
  2. When the oil is hot, add the cut shrimp to the pan. Sauté, stirring often, until the shrimp are firm, opaque, and just cooked through, about 2-3 minutes. 
  3. Drain the excess liquid from the skillet, then place the cooked shrimp in a bowl.
  4. To the bowl, add the mango, onion, tomato, jalapeño, cilantro, lime juice, orange juice, garlic, salt, and pepper. Taste and adjust seasoning, if necessary. Let sit for about 30 minutes to let the flavors incorporate
  5. Top with Rizo Bros Queso Fresco and serve with tortilla chips and extra lime and jalapeño!
