Lobster Nachos

Serves: 4-6
Combine lobster, corn tortilla chips and Rizo Bros Grated Cotija and Oaxaca cheeses for a party pleaser appetizer.

INGREDIENTS:

  • 1 lb corn tortilla chips
  • ½ cup Rizo Bros Cotija Cheese, grated
  • ½ cup Rizo Bros Oaxaca Cheese
  • ½ cup Rizo Bros Oaxaca cheese
  • ½ cup Rizo Bros Grated Cotija cheese
  • 1 cup lobster meat, tail/claw
  • 2 tbsp butter
  • 1 cup pico de gallo
  • ½ cup cilantro, chopped
  • 1 cup avocado, diced
  • 1 tsp salt
  • 1 tsp butter
  • 1 lime, cut into wedges
  • ½ cup sour cream

PREPARATION:

  1. Pre-heat oven to 350 degrees
  2. Line baking tray with aluminum foil and spread tortilla chips in single layer on tray
  3. Top chips with cotija cheese & bake for 5-7 minutes or until cheese is melted
  4. While chips are in oven, melt butter in sauté pan
  5. Add lobster to pan with butter and cook for 2 minutes
  6. Season lobster with salt and pepper
  7. Place nachos on plate & top with lobster, avocado, cilantro, and dollops of pico de gallo
  8. Serve with lime wedges and sour cream. Enjoy!
