Loaded Queso Blanco and Green Chili Breakfast Burritos

Serves: 4-6
The title says it all - loaded Queso Blanco green chili breakfast burritos.

INGREDIENTS:

  • 2 small russet potatoes, washed and diced
  • 8 slices bacon, sliced
  • 7 oz can green chiles, drained
  • ½ cup Rizo Bros Queso Blanco, crumbled
  • 8 eggs, scrambled
  • 4-6 large flour tortillas
  • Salt and pepper, to taste
  • Hot sauce, to serve
  • Sour cream, to serve

PREPARATION:

  1. Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper. 
  2. Place the potatoes and bacon onto the baking sheet together and mix. Roast for about 20 minutes until the bacon is cooked and the potatoes are tender. Toss and place back into the oven. Turn the oven to broil and broil for about 3-5 minutes until crispy with a slight char.
  3. Pour the potatoes and bacon into a large bowl and add the freshly scrambled eggs, green chiles, and queso blanco. Mix to combine. 
  4. Heat a large flour tortilla and add a generous scoop of the mixture into the center. Carefully fold it. 
  5. If desired, heat a large skillet over medium high heat and place the rolled burrito into a dry hot pan to crisp both sides. Repeat with remaining tortillas and filling.
  6. Serve with hot sauce and sour cream if desired.
