Serves: 4-6 Top these nachos with this quick cilantro lime sour cream and whatever your heart desires - we recommend pickled jalapeños and our Grated Spicy Cotija Cheese.
INGREDIENTS:
Tortilla chips
8 oz Rizo Bros Oaxaca, shredded
1 cup refried beans
Cilantro Lime Sour Cream
½ cup sour cream
1 lime, juiced
2 tbsp cilantro, chopped
Pinch of pepper
Other Toppings
Pickled jalapeños
Lime wedges
Spicy Grated Cotija
Cilantro
PREPARATION:
Preheat the oven to 400 degrees fahrenheit and line a small baking sheet with parchment paper.
Spread an even amount of chips onto the baking sheet. Follow by sprinkling the Rizo Bros Oaxaca cheese evenly over the chips, and dropping dollops of the refried beans evenly over the chips.
Bake for about 5-10 minutes until the cheese has fully melted.
While the nachos are baking, whisk together all of the ingredients for the cilantro lime sour cream.
Remove the nachos from the oven and top with the sour cream, pickled jalapeños, Rizo Bros spicy grated cotija, and cilantro.
