Serves: 4-6 This delicious dip is made with black beans and topped with fresh corn, cilantro, tomato and lime, as well as our amazing Grated Spicy Cotija Cheese.
INGREDIENTS:
Bean Dip
2 can black beans, drained and rinsed
1 lime, juiced
½ cup cilantro
2 tbsp avocado oil
2 garlic cloves
½ tsp black pepper
½ tsp salt
¼ tsp cumin
Topping
1 red bell pepper, finely diced
1 green onion, finely sliced
1 lime, juiced
½ cup corn
½ cup cilantro, roughly chopped
½ cup Rizo Bros Grated Spicy Cotija
¼ cup red onion, finely diced
½ tsp salt
¼ tsp black pepper
PREPARATION:
To make the base of the bean dip, combine the beans, lime juice, cilantro, garlic and seasonings into a food processor. Pulse until well combined, scrape sides, and add oil. Pulse again on high until smooth. Spread into serving dish and set aside.
To make the loaded topping, combine all the topping ingredients in a bowl and lightly toss until incorporated.
Pour topping on top of the bean base, garnish with more cilantro if desired and serve with your favorite chips.
