Cilantro Lime Chicken Tacos

Serves: 4-6
These tacos are a refreshing mix of flavors with cilantro lime chicken, pineapple, and queso fresco.

  • 1 pound chicken breasts
  • 1 dozen small corn tortillas
  • 1 can pineapple chunks
  • 1/2 cup Rizo Bros Queso Fresco, crumbled
  • 1 cup olive oil
  • 1 lemon, juiced
  • 1 jalapeño, finely diced
  • 2 tbsp crushed garlic
  • 1 bunch cilantro, finely chopped
  • 1 tbsp ground cumin
  • 1/2 red onion, finely diced
  • 2 limes, zested and juiced


  1. Combine olive oil, lemon juice, garlic and cumin in a mixing bowl
  2. Butterfly chicken breasts and place in bowl with marinade
  3. Remove after about 30 minutes
  4. Heat large skillet to medium-high heat
  5. Add oil to pan and place chicken in skillet
  6. Flip chicken breasts after 3 minutes and cook for an additional 4 minutes
  7. Dice chicken into small pieces
  8. Add onions to pan with oil, stir until tender
  9. Add chicken to pan and season with salt, pepper, and lime and stir
  10. Place pineapple chunks, cilantro, salt, pepper, and jalapeño in a bowl and combine
  11. Chill for about 30 minutes
  12. Heat skillet to medium-high heat
  13. Lay tortillas in skillet and flip after about 30 seconds and remove after additional 30 seconds
  14. Lay tortillas on plate, doubled up
  15. Top tortillas with chicken mixture
  16. Top tacos with pineapple salsa and Rizo Bros crumbled Queso Fresco
