Jalapeño Popper Corn Dip

Turn up the heat with our Jalapeño Popper Corn Dip! Creamy, cheesy, and packed with a spicy kick

INGREDIENTS:

  • 2 jalapeños
  • 8 oz cream cheese, softened to room temperature
  • 2 cups fire roasted corn kernels
  • 1 ½ cups shredded Rizo Bros Queso Oaxaca, divided
  • ¼ cup sour cream 
  • ¼ cup mayonnaise
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¾ tsp salt
  • Tortilla chips, to serve

PREPARATION:

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Finely chop the jalapeños, including the seeds if desired for spice.
  3. Mix together the jalapeños, softened cream cheese, corn, 1 cup shredded cheese, sour cream, garlic powder, onion powder, and salt. Spread in a baking dish, then top with the remaining ½ cup shredded cheese.
  4. Bake for 20-25 minutes or until bubbly and golden brown. Let cool for 5 minutes, then serve hot with tortilla chips and enjoy!
