In a medium bowl, combine the corn, mayonnaise, chili powder, cotija cheese, and lime juice. Stir in the oaxaca cheese, then set aside.
Cut a jack-o-lantern face into three tortillas. Meanwhile, heat a medium skillet over medium heat and add a small amount of butter or oil to the skillet.
When the butter is melted, place one whole tortilla in the skillet. Scoop about ½ cup of the corn and cheese mixture onto the tortilla, then top with one of the jack-o-lantern tortillas.
Fry the quesadilla until the underside is golden brown and the cheese is mostly melting, about 3 minutes. Flip the quesadilla with a spatula and continue cooking until the other side is golden and crisp, about 2 minutes. Remove from heat and repeat with the remaining quesadillas.
Serve warm. For an extra festive touch, cut a bell pepper stem to use as the pumpkin stems!
