Huevos Rancheros Breakfast Nachos

Serves: 4-6
Nachos aren't just for afternoon or dinner anymore. Cheesy, melty and filling - the huevos rancheros nachos are the ultimate comfort breakfast.

INGREDIENTS:

  • Couple handfuls of tortilla chips
  • 8 oz Rizo Bros Queso Oaxaca Cheese, shredded
  • 1, 15 oz can black beans, drained and rinsed
  • ΒΌ cup finely diced red onion
  • 1 large tomato, diced
  • 1 jalapeno, thinly sliced
  • 4-6 eggs
  • Desired toppings such as sliced black olives, cilantro, avocado, and salsa

PREPARATION:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Spread the tortilla chips in a single even layer on a baking sheet or dish.
  3. Top with shredded cheese, then black beans, onion, tomato, and jalapeno. Make 4-6 shallow wells in the toppings, then gently crack the eggs into the wells.
  4. Bake in the preheated oven for about 15-20 mins, or until egg whites are set and the eggs are cooked through to your liking.
  5. Remove from the oven and finish with more toppings as desired such as black olives, cilantro, avocado, and salsa.
